This Marmalade is made from Seville oranges which are only available for a limited time during the year, normally January to February. The recipe for it is from Mrs Beeton's Cook Book and it is a rich, bitter, orange marmalade.
Mrs Beeton was possibly the most famous and renowned Victorian writer and journalist and wrote "Mrs Beeton's Book of Household Management". It contained 1,112 pages on how to manage a Victorian Household but 900 pages were recipes with colour illustrated drawings. Due to the number of recipes it quickly become known as a cookbook. Mrs Beeton is credited with having compiled the book as she used recipes from other cooks such as Eliza Acton. It's well worth a read as a lot of the recipes are still relevant today and it is a snapshot of what it was like to live in Victorian times.
